A whimsical colorful dessert with confetti cake, rainbow pudding filling, and whipped cream topping.

# What You Need:

→ Cake Base

01 - 1 box funfetti or vanilla cake mix (approximately 15.25 ounces)
02 - Cake mix required ingredients (typically eggs, vegetable oil, and water per package instructions)

→ Colorful Pudding Filling

03 - 2 packages instant vanilla pudding mix (3.4 ounces each)
04 - 4 cups cold milk
05 - Gel food coloring in pink, purple, blue, and yellow

→ Topping and Garnish

06 - 1 tub whipped topping (8 ounces), thawed
07 - Unicorn or colorful confetti sprinkles for decoration

# Steps:

01 - Preheat oven to 350°F. Lightly grease a 9x13-inch baking pan with non-stick cooking spray.
02 - Prepare cake batter according to package directions. Pour into prepared pan and bake for 25-30 minutes until a toothpick inserted into the center comes out clean.
03 - Remove cake from oven and allow to cool for 10 minutes. Using the handle of a wooden spoon, create holes every 1-2 inches across the surface of the warm cake.
04 - In a large mixing bowl, whisk together both packages of instant vanilla pudding mix with cold milk for approximately 2 minutes until mixture begins to thicken.
05 - Divide pudding mixture evenly among 4 separate bowls. Add a different gel food coloring to each bowl, mixing thoroughly until vibrant colors are achieved.
06 - Spoon the colored puddings randomly into the poked holes, alternating colors to create a rainbow effect throughout the cake.
07 - Spread thawed whipped topping evenly over the entire surface of the cooled cake.
08 - Sprinkle unicorn or confetti sprinkles generously over the top. Refrigerate for at least 1 hour before slicing and serving to allow flavors to meld.

# Expert Advice:

01 -
  • Its like having a party trick that actually tastes incredible
  • The moist pudding infused cake is so much better than regular frosted cake
02 -
  • Work quickly once the pudding starts thickening because it will set up fast and become harder to spoon into those little holes
  • The cake needs to be warm not hot when you poke it or the pudding will slide right through to the bottom
03 -
  • If your pudding starts setting before you finish coloring just whisk in a tiny splash more milk to loosen it up
  • Run your wooden spoon under warm water between holes to keep the cake from sticking to it
