- Place the shredded sweetened coconut in a dry skillet over medium heat. Stir constantly for 3 to 5 minutes until the coconut is lightly golden and fragrant. Remove from heat and allow to cool.
- Core each apple and cut into 1/4-inch thick rings. Arrange the apple slices in a single layer on a parchment-lined tray.
- If using caramel candies, combine them with 1 tablespoon water in a microwave-safe bowl. Melt in 20-second increments, stirring after each, until smooth. For caramel dip, heat gently if needed until spreadable.
- Using a spoon or offset spatula, spread a thin layer of warm caramel over each apple slice.
- Generously sprinkle toasted coconut over the caramel layer on every apple slice, pressing lightly to adhere.
- In a microwave-safe bowl, melt the chocolate chips with coconut oil (if using) in 20-second intervals, stirring until glossy and smooth.
- Using a fork or a piping bag, drizzle the melted chocolate evenly over all coconut-topped apple slices.
- Optionally, sprinkle flaky sea salt on top for added dimension. Let the apple slices sit for 5 minutes until the chocolate and caramel have set. Serve immediately.
