# Steps:

01 - Preheat oven to 400°F. Pierce sweet potatoes several times with fork. Place on baking sheet and roast 40-45 minutes until fork-tender.
02 - Heat olive oil in large skillet over medium heat. Add diced onion and bell pepper, sauté 3-4 minutes until softened.
03 - Add garlic, cook 30 seconds until fragrant.
