# What You Need:

01 - 1 cup rolled oats (gluten-free if needed)
02 - 1/2 cup vanilla protein powder

05 - 1/8 tsp ground ginger
06 - Pinch of salt

→ Wet Ingredients

07 - 1/2 cup pumpkin puree (not pumpkin pie filling)
08 - 1/4 cup almond butter or peanut butter
09 - 1/4 cup pure maple syrup
10 - 1 tsp vanilla extract

→ Add-Ins

11 - 2 tbsp mini dark chocolate chips (optional)
12 - 2 tbsp chopped pecans or walnuts (optional)

# Steps:

01 - In a large mixing bowl, combine oats, protein powder, cinnamon, nutmeg, ginger, and salt.

03 - Add the wet mixture to the dry ingredients. Stir until well combined and a thick dough forms.
04 - Fold in chocolate chips and nuts, if using.
05 - Scoop out heaping tablespoons of the mixture and roll into balls using your hands (about 1 inch in diameter).
06 - Place the bites on a parchment-lined tray or plate.
