Creamy frozen bites blending Greek yogurt, peanut butter, and honey for a protein-packed treat.

# What You Need:

→ Yogurt Base

01 - 1 1/2 cups plain Greek yogurt (2% or 0% fat)
02 - 1/2 cup natural peanut butter
03 - 2 tablespoons honey or maple syrup
04 - 1 teaspoon pure vanilla extract
05 - Pinch of salt

→ Mix-Ins (Optional)

06 - 1/4 cup mini dark chocolate chips
07 - 1/4 cup chopped roasted peanuts

# Steps:

01 - Line a mini muffin tin or a small baking sheet with silicone or paper liners.
02 - In a medium mixing bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and salt. Stir until the mixture is completely smooth and well incorporated.
03 - Gently fold in the mini chocolate chips and chopped peanuts, if using, distributing them evenly throughout the mixture.
04 - Spoon the mixture evenly into the prepared liners, filling each to the top, approximately 1 tablespoon per bite.
05 - Use the back of a spoon to smooth and level the surface of each portion.
06 - Place in the freezer for at least 2 hours, or until the bites are completely firm and set.
07 - Once frozen solid, remove the bites from the molds and transfer them to an airtight container. Store in the freezer until ready to serve.

# Expert Advice:

01 -
  • You can eat four of them and still feel smug about your choices.
  • They disappear so fast you will want to double the batch immediately.
02 -
  • Do not use crunchy peanut butter as the base because it makes the texture grainy instead of smooth.
  • Letting them sit at room temperature for more than five minutes turns them into a puddle so eat them straight from the cold.
03 -
  • Use a cookie scoop instead of a spoon for perfectly even portions every single time.
  • The mixture tastes completely different once frozen so trust the process even if the raw mix seems too tangy.
