01 - Line a baking sheet with parchment or wax paper to prevent sticking.
02 - In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second increments, stirring after each, until melted and smooth. Alternatively, melt using a double boiler on the stovetop.
03 - Insert a skewer or toothpick into the base of each Peep for easy dipping (optional).
04 - Dip each Peep into the melted chocolate, turning to coat fully. Allow excess chocolate to drip off.
05 - Place the coated Peeps onto the prepared baking sheet. Immediately decorate with sprinkles, nuts, or colored sugar if desired.
06 - Allow the chocolate to set at room temperature for 30 minutes, or refrigerate for 10-15 minutes until firm.
07 - Remove skewers if used. Serve or package as gifts.
